CI Recipes - "Cloudy With a Chance of Meatballs"

Sauce Recipe:

In a small dish combine the following dry ingredients:
1 well rounded TBS grated Parmesan or
Romano cheese
1-1/2 tsp Lawry seasoned salt
1 rounded tsp oregano
1 rounded tsp basil (You may want to add a bit
more of this)
1 rounded tsp parsley
½ tsp red pepper flakes

In a 2 quart pan sweat (about 5 min.) in 1 TBS olive or vegetable oil:
¼ cup, plus or minus, diced onion
¼ cup, plus or minus, diced green pepper
1 or more cloves crushed or minced garlic

1-3/4 cups water
Dry ingredients above
2 6 oz. cans tomato paste

Stir til smooth, bring to boil then simmer. In a separate skillet, cook 1 lb, plus or minus, of ground beef working it well with a fork till well crumbled. (90% lean or higher you do not have to drain grease) Add meat to simmering mixture, add additional seasoning if desired, stir and simmer about 30 minutes.

Meatball Recipe:

1 lb ground meat
4 oz Italian bread crumbs
4 eggs
4 oz milk
6 oz grated parmesan cheese
3 oz Spanish onion
2 oz garlic
2 oz basil
2 tsp kosher salt
3 oz chopped jalapenos
1/4 cup mozzarella cheese

Preheat oven 350 degrees. Spray pan. Roll into balls and place on pan. Cook in skillet until brown. Simmer in marinara sauce for 15-20 mins
