Yield: 10" Pizza
2.5 c grated cauliflower (about ½ large head)
1 large egg, lightly beaten
1 c shredded, part skim, mozzarella cheese
2 Tbsp grated Parmesan cheese
Kosher salt & ground pepper
Toppings (choose as you wish)
¼ c tomato sauce
½ c shredded, part skim, mozzarella
1 tomato, sliced
2 cloves garlic
½ c spinach
Spices (crushed red peppers, herbs de Provence)
1. Preheat oven to 425 F
2. Grate cauliflower using a box grater, place cauliflower crumbles in a bowl and microwave for 7-8 minutes, or until softened. Remove and let cool
3. Mix cauliflower, egg, mozzarella, Parmesan, and salt & pepper. Pat mixture into a 10" round and place on a sprayed baking sheet.
4. Par bake for 10-15 minutes, or until golden brown
5. Top the pizza with desired toppings and bake in oven for an additional 10 minutes.
