Snow White Apple Salad with an Apple Rose Garnish

Yields: 1 salad
Prep Time: 15 minutes

4 oz. Water
4 oz. Lemon Juice
1 Apple
2 oz. Romaine Lettuce
1 oz. Goat Cheese
0.88 oz. Chopped Pecans

Combine water and lemon juice in a small bowl and set aside. Set a mandolin slicer to the thinnest setting. Gently slice half of the apple. Place apple slices into the lemon juice bowl. Using a knife talk the other half of the apple and julienne into strip sizes of your preference. Place the apple strips into lemon juice bowl.

Place 2 oz. of romaine lettuce on a plate. With your fingers take the goat cheese and break into about 5-6 large chunks. Sprinkle the goat cheese pieces over the lettuce. Take 6-8 pieces of apple sticks out of the lemon juice and place on top of the salad. Sprinkle chopped pecans over the salad.

For the apple rose garnish, remove 4-5 apple slices from the lemon juice and cut in half. Working quickly yet gently, take one half apple slice and roll it up, this will be your base. Then take another half apple slice and wrap it around the base, this is now one petal. Continue to wrap half apple slices around the base, overlapping other petals as you go. Continue until you have reached the desired thickness of your rose. Place the apple rose in a sauce cup. Pour the dressing over the apple flower and into the sauce cup. Place the sauce cup in the middle of the salad and serve.

Dressing: Honey Red Wine Vinaigrette

Yield: 1 cup
Prep Time: 5 minutes

¼ cup Red Wine Vinegar
¼ cup honey
1 Clove Garlic, minced
½ tsp. Salt
¼ tsp. White Pepper
½ cup Light Olive Oil

In a blender, blend red wine vinegar, honey, garlic, salt and pepper on high. While blending, remove center lid and slowly add the oil in a steady stream. Blend until vinaigrette has become an emulsion. Store in an airtight container in the refrigerator for up to 3 weeks.
