12 ounces bulk turkey breakfast sausage
1 small bell pepper, chopped
1 small onion, chopped
1 cup steamed broccoli florets
1 ½ cups frozen shredded hash brown potatoes
½ cup shredded reduced-fat sharp cheddar cheese
½ cup all-purpose flour
¾ teaspoon baking powder
¼ tsp salt
½ tablespoon canola oil
1 cups 1% milk
1/8 tsp pepper
1.Heat oven to 400 degrees F. Spray a 9” pie plate with cooking spray.
2.In a large skillet, sauté sausage, bell pepper, and onion over medium heat until sausage is cooked through (no longer pink). Drain off excess liquid and transfer mixture to a large bowl.
3.Add cooked broccoli, frozen hash brown potatoes, and half of the cheese; mix until evenly combined. Spread in pie plate.
4.In a medium bowl, whisk together flour, baking powder, oil, milk, salt, pepper, and eggs until blended. Pour into the pie plate to cover meat and vegetables.
5.Bake uncovered about 30-35 minutes or until knife inserted in center comes out clean.
6.Sprinkle with remaining cheese and return to oven. Bake additional 1-2 minutes or until cheese is melted.
Note: To make in a 13x9” dish, double ingredients and increase cooking time to 35-40 minutes.
