Old National Bank presents "100 Men Who Cook," a fundraiser to support Presence United Samaritans Medical Center’s Foundation, on Saturday, April 5. The inaugural event will be held at the David S. Palmer Arena, beginning at 6 p.m.

Local "celebrity" chefs--public figures, business leaders and owners and other professionals--will prepare their favorite culinary dish, and samples will be available for guests to enjoy. In addition, the event features a limited-item live auction with unique packages, cash bar and special entertainment. Tickets for the event are $60 per person or $450 for a table of 8. Tickets must be purchased in advance.

All proceeds will help fund the creation of a Family Retreat Area at Presence United Samaritans Medical Center. The new area is intended to provide a comfortable sanctuary within the hospital for family members to relax while their loved one is receiving care.

Tzatziki Slaw:
Cole slaw mix or chopped summer garden blend salad 8 oz bag
English cucumbers- 2 chopped
1/3 medium white onion or vandalia
Non fat greek yogurt 16 oz
Fat free feta cheese 6oz crumbled
1 garlic clove finely chopped
2 tbsp red wine vinegar
2 roma tomatoes chopped
Juice of 1/2 lemon
Salt and pepper to taste

1/2 tbsp fresh mint finely chopped
1 tbsp chopped black olives

Flat bread/pita:
Artisan flatbread (rosemary and olive oil) Or pocket less pita

Ground lamb:
1 tbsp extra virgin olive oil
2 lbs ground lamb
Salt and pepper to taste
1/2 red onion
1 tsp oregano
2-3 garlic cloves minced
1 tbsp tomato paste
2 tbsp dry red wine

Garnish (skewer):
Black olive, feta cheese, pepperoncini and cherry tomato

Tzatziki slaw
Place slaw mix (or salad mix) in a large bowl
Chop cucumber and tomato to match the relative size of the store bought slaw/salad ingredients, add to bowl
Finely chop the onion and the garlic clove and add to bowl
add all remaining ingredients (yogurt, feta, vinegar, lemon juice)
Add salt and pepper and adjust ingredients to taste
Cover, refrigerate and let sit for about an hour (or at least while you prepare the lamb) for all flavors to meld together

For the Lamb (or Chicken):
In a large skillet, heat oil over medium high heat
Add the lamb and oregano, season with salt and pepper. Cook until the meat gets nice and golden brown (about 10 minutes)
With a slotted spoon, remove the lamb and reserve
Drain excess juices/fat, but leave a healthy portion to saute the onions in
Lower the heat to medium and saute the onions in the lamb juices until soft.
Add the garlic and cook until fragrant
Add the tomato paste and cook until it caramelizes
Deglaze the pan with the red wine and scrape any bits up that have adhered to the pan.
Add the lamb back in the pan, stir and keep warm

Build the Wrap:
Place a good portion of the lamb mixture on the flatbread/pita, top with the Tzatziki slaw, fold and eat carefully with a garnish skewer of black olive, feta cheese, cherry tomato and a pepperoncini. Enjoy!
