Makes about 10 patties
•2 cups cooked quinoa
•3/4 cup shredded Parmesan cheese
•1/2 cup 2% cottage cheese, 1%, or fat-free
•1 cup shredded carrots or 1 cup shredded zucchini, squeezed dry)
•4 eggs, beaten
•¼ cup all-purpose flour
•2 green onions, sliced
•¾ teaspoon dried rosemary
•1/4 teaspoon black pepper
•1/8 teaspoon salt
•1/8 teaspoon garlic powder
•Light sour cream (optional)
1.Cook quinoa according to instructions on box, using low-sodium or unsalted broth instead of water.
2.Mix all ingredients together in a large bowl.
3.In a nonstick skillet prepared with cooking spray, drop ¼ cup of quinoa mixture into pan and lightly flatten using back of measuring cup. (Mixture will be sticky – you may want to spray measuring with cooking spray to help). Cook on medium-low heat about 4 minutes on each side, or until golden brown.
4.Serve with light sour cream if desired.
