Spice Box Dinner - Santorini Greece

Urbana, IL - U of I student chef Lauren Hurt showcases Spanakopita. 

SPANAKOPITA
Servings:  8
Portion Size: Three 0.9 ounce Triangles
INGREDIENTS
1 tbsp        80/20 Oil
½ lb            Feta Cheese, Crumbled
10 oz            Spinach, Frozen
1 count        Whole Egg
1 oz            Green Onion, chopped
1 oz            Shredded Parmesan Cheese
¼ lb            Salted Butter
½ lb            Filo Dough (1 tube from box)
1/8 tsp        Pepper
1/8 tsp        Salt

DIRECTIONS
    Thaw frozen spinach by running under warm water. Taking frozen spinach with gloved hands, wring out moisture and place dried spinach in large mixing bowl. Make sure all of the moisture is out of the spinach.
    Chop green onions.
    Use skillet on medium heat with 80/20 oil to fry chopped green onion and spinach. Season with salt and pepper. Remove from heat and let cool slightly.
    In a large mixing bowl mix crumbled feta, egg and shredded parmesan. Set aside.
    Once cooled, combine spinach mixture with cheese mixture. Mix well.
    Line baking sheet with parchment paper and set aside.
    Melt butter in a sauce pan.
    Pick up two sheets of filo dough and set on table long ways vertically (shorter side of filo dough on top and bottom).
    Slice filo dough vertically into three equal strips.
    Butter the first strip. Take a 0.5 ounce portion of spinach/cheese filling and place at bottom of filo strip.
    Begin folding filo dough into triangles, moving upward. Be sure to contain the filling within the triangle as you move upward, and be careful with the fragile dough.
    Butter both sides of triangle and place on lined baking sheet.
    Repeat until no more filling remains.
    Bake in a 350-degree oven for 20 minutes, until golden brown.
    Remove from oven and let cool.
    Serve three triangles on an appetizer plate, garnished with two green onion sprigs.
