Avocado Mango Salsa Recipe

Anita Dukeman is back with a tasty summer dip!

Arthur, Ill. - Guest chef, Anita Dukeman, is back promoting the cooking camps she'll be doing this summer. The first classes are aimed toward young children and teens and getting them to learn fun food facts, encouraging them to eat the colors of the rainbow and learn basic knife skills.

Avocado Mango Salsa

Ingredients

2 avocados, peeled, pitted and diced 

1 lime, juiced 

1 mango, peeled, seeded and diced 

1 small red onion, chopped (about ¼ cup)

1  clove garlic, minced

1 small tomato (or 5 cherry tomatoes), chopped

1 jalapeno pepper or habanero (if you like it SPICY), seeded and chopped 

1 bunch fresh cilantro, chopped 

1-2 Tablespoons olive oil

 salt to taste 

 

Directions

PLACE avocados and lime juice in a mixing bowl. MIX to combine. ADD the mango, onion, garlic, tomato, jalapeno pepper, cilantro, olive oil, and salt. SERVE with tortilla chips or as a side dish. 

 

Food facts: Apples, onions and potatoes taste the same with your nose pinched.
