Cranberry and Brie Crostini & Holiday Slaw with guest chef, Anita Dukeman

Arthur, Ill (WCIA) - Guest chef, Anita Dukeman, is back and helping us add cranberries to your holiday menu!


Super healthy--high in antioxidants and vitamin C (but watch for added sugar in cranberry sauce and dried fruit.

Cranberry and Brie Crostini

Ingredients
1 French baguette, sliced thin 
½ 14-oz can cranberry sauce (or about 1 cup of homemade cranberry sauce)
2  Tablespoons orange zest (optional)
3  Tablespoons butter, melted 
3  Tablespoons olive oil 
5  ounces brie 

Instructions
HEAT oven to 400°F. 

PLACE baguette slices on foil-lined or parchment paper-lined baking sheet. 

In a medium microwave-safe bowl, COMBINE cranberry sauce and orange zest, if using.  Set aside. 

In a small bowl, COMBINE melted butter and olive oil. 

BRUSH the tops of baguette slices with butter/olive oil mixture.

TOAST baguette slices for 7-8 minutes, until golden and crispy. REMOVE from oven. 

SLICE brie into thin pieces (about ¼ inch pieces).

PLACE 1 piece of brie onto each toasted baguette slice.

RETURN to the oven for about 3-5 minutes until brie begins to melt. REMOVE from oven. 

HEAT cranberry sauce in the microwave until warm.

TOP each crostini with 1 teaspoon cranberry sauce.  SERVE immediately. 

Holiday Slaw

Dressing:
1/3 cup extra virgin olive oil or vegetable oil of choice 
1/4 cup apple cider vinegar
2  Tablespoons maple syrup
4  teaspoons Dijon mustard
1/2 teaspoon salt

Salad:
1 small head green cabbage, shredded (10 cups’ worth of shredded cabbage)
1/2 medium red onion, finely chopped 
3/4 cup sliced almonds or chopped pecans, toasted
3/4 cup dried cranberries
3/4 cup fresh Italian parsley leaves, coarsely chopped

Dressing:  COMBINE vinegar, oil, maple syrup, Dijon, and salt together in a large bowl. 

Salad: REMOVE core of the cabbage. CUT cabbage into quarters and THINLY SLICE into shreds. 

PLACE shredded cabbage, red onion, toasted almonds/pecans, cranberries, and parsley in a large bowl. ADD dressing and TOSS to combine. SEASON with salt and pepper as desired. 

NOTE: Feel free to used bagged shredded cabbage to save time.
