Champaign, Il (WCIA) - Lisa Lewey-Shields is "tweaking it and making it your own" with different dip recipes perfect for your upcoming holiday party!

Cracked Out Hot Broccoli Dip

· Ingredients · · 8 oz cream cheese, softened · 1 (1oz) package Ranch dressing mix · 1 (3oz) bag bacon bits (Oscar Meyer) · 2 cup shredded cheddar cheese · 16 oz sour cream · 2-1/2 cups finely chopped fresh broccoli florets · 1/3 cup crushed Ritz Crackers Directions Preheat oven to 400. In bowl, combine all ingredients except Ritz crackers; mix well. Transfer to 2-quart baking dish; top with crushed Ritz crackers. Bake dip 25 to 30 minutes or until hot and bubbly.

 

Crack Chip Dip

Ingredients

16 oz sour cream

1 (1 oz) packet ranch dressing mix

3 oz real bacon bits

1 c. shredded cheddar cheese

Instructions

Mix together.

It’s best if you refrigerate it for a day before eating!

 

 

Spinach Artichoke Dip

Ingredients

8 oz of cream cheese, soften

⅔ cup sour cream

⅓ cup mayonnaise

2 cups shredded Parmesan cheese (I used 1 + cups)

2 teaspoons minced garlic

10 oz frozen spinach chopped, thawed and drained well

1 14oz can artichoke hearts drained and chopped

Directions

Preheat oven to 375 degrees.

In a medium mixing bowl mix together the cream cheese, sour cream, and mayonnaise until there a no lumps.

Stir in the cheese, garlic, spinach and artichokes into the cream cheese mixture.

Pour the dip into a 8×8 baking pan.

Bake for 20-25 minutes or until the edges start to get browned.

Sever the dip with your favorite chips, crackers or toast points.

 

Crab and Cream Cheese Spread

1 8 oz. cream cheese

1/3 cup Hellmann’s mayo

½ pkg imitation crab sticks or crab pieces about ¾ lb. minced (you can use real crab)

½ small sweet onion – minced very fine

1 bottle Cocktail Sauce any brand (I prefer Hoffman House – Shrimp & Seafood Sauce)

 

Work the mayo, ½ the crab and onion into cream cheese.

Spread onto plate or serving tray.

Pour cocktail sauce over top of cream cheese.

Garnish other ½ of minced crab over top of cocktail sauce.

Refrigerate. Serve with crackers.

 

I usually double this recipe….. Everyone loves it and it goes fast.

If there is any leftover, cover and it keeps nicely for 2-3-4 days in refig.

Cowboy Caviar

Ingredients

1/2 cup olive oil

1 TBP to ¼ cup sugar… Add until your preference…..

1/3 cup white wine vinegar

1 teaspoon chili powder

1 teaspoon salt

1 pound Roma tomatoes, seeded and diced

1 (15 ounce) can black-eyed peas, drained and rinsed

1 (15 ounce) can black beans, drained and rinsed

1 (11 ounce) can super sweet corn or white shoepeg drained (can use ¾ cup fresh or frozen)

1 red onion, diced ( can use yellow, white, or green onion)

1/2 cup diced green bell pepper

1/2 cup diced red bell pepper or tricolor peppers

1 cup chopped cilantro (from 1 bunch)

Instructions

In a large bowl, whisk together the olive oil, sugar, white wine vinegar, chili powder, and salt.

Add tomatoes, black-eyed peas, beans, corn, red onion, and bell peppers. Stir to combine.

Stir in cilantro.

Cover and chill at least 1 hour or overnight to blend flavors. Serve chilled or at room temperature.

 

Corn Dip 1 red pepper - diced

2 jalapenos (unseeded unless you like the heat)

1 can of corn or mexicorn - drained

½ can diced olives

2 blocks cream cheese -room temp

1 packet Hidden Valley Ranch dip seasoning mix

 

Mix ingredients together.

Serve with crackers or raw veggies.

 

Tex-Mex Corn Dip

LaTeaDa Tea Room Clinton IL

1 can Fiesta corn or Mexican Corn (with green and red peppers)

1 8 oz. block of cream cheese – softened

1 small can green chilis

1 cup shredded parmesan cheese

2 cup shredded Pepper Jack Cheese

 

Mix all ingredients together and bake at 350° in a greased pie pan. Cover with aluminum foil for 30. Stir. ***

Enjoy with crackers or chips.

*** I made this in my Crockpot and cooked it on high for 30 mins and then backed it down to low for another 45 mins and then served it warm for 2+ hours stirring every 20 -30 mins…..
