Crab & cream cheese snacks

1-8 oz. tube crescent roll dough
3 oz. cream cheese, softened
1/4 cup mayonnaise
3/4 cup cooked crabmeat, chopped
2 green onions, chopped
1/8- 1/4 teaspoon cayenne pepper
salt and pepper, to taste

Heat oven to 375°F. Spray cookie sheet with cooking spray. Unroll dough on work surface. Pinch seams to seal and roll with a rolling pin to create an even rectangle. Cut into 6 rows by 4 rows to make 24 squares.

In small bowl, mix cream cheese, mayo, crab meat, onion, and red pepper. Salt and pepper to taste. Divide crab mixture evenly among the squares, dropping it by spoonfuls that are 1/2 inch from 1 corner of each square. Starting with same corner, fold dough over filling, and tuck end tightly underneath filling; continue rolling to within 1/2 inch of opposite corner. Roll opposite corner of dough over roll; press to seal. Place on cookie sheet. Brush with egg white, if desired.

Bake 10 to 15 minutes or until golden brown. Remove from cookie sheet. Serve warm

Dole’s Cranberry – Pineapple Minis

1 can (20 oz) Crushed Pineapple in juice
2 pkg (3 oz ) Jell-o Raspberry Flavor Gelatin
1 ½ cups water
1 can (16 oz) whole berry cranberry sauce
2/3 cup chopped walnut (optional)
1 apple chopped (I like granny smith or honey crisp or pink lady)

*Drain pineapple well, reserving juice. Every time, I got one cup of remaining pineapple juice. To this add 1 ½ cups water to equal out to 2½ cups of liquid. Pour into saucepan. Bring to boil.
Place gelatin into a large bowl. Pour boiling liquid over gelatin. Stir 2 mins until completely dissolved.
Stir in pineapple, cranberry sauce, walnuts and apple. Spoon into 24 paper-lined muffin cups or 16-18 individual disposable containers. Refrigerate 2½ hours or overnight until firm. Remove liners.

* I have also used two cans of cranberry sauce to this recipe and I have added a cup of applesauce to the recipe…. Both are very good.


Jello Krispie Apples about 10-12
Ingredients are as follows:

1 (10 ounce) package marshmallows
1/4 C butter
1 (0.3 ounce) package sugar free jello
5 1/2 C crisp rice cereal

6-7 mini pretzel rods
1 green fruit roll-up

Directions:

In a large pot, melt butter over low heat. Add the marshmallows and stir until melted.
Add the cereal; continue to stir until the cereal is completely coated.
Add the jello and stir until completely incorporated
Spray your hands with nonstick cooking spray. Take a handful of mixture and shape into an apple; set aside. Repeat until done.
Break the pretzel sticks in half. Insert one half into the top of your apple.
Unroll the fruit roll-up and cut a leaf shape from it. (I used my butterfly cookie cutter, however you could just do it with a knife.)
Remove cut-out from the wrapper and place it on top of the apple (I like to tuck mine in by the pretzel rod). Continue until all the apples are done.

Corn Dog Bites
Mix up an 8.5oz box of corn muffin mix
Divide batter into the Mini-Muffin Pan
Add hot dog slices
Bake for 10-12 minutes at 375°
