Anytime Harvest Chicken & Root Vegetables

Using T-Fal Compact Steamer

 

2-3 Boneless Chicken breasts

1 tablespoon Kitchen Bounty Amazing Rub

2 Apples, peeled and cut into chunks

2 Carrots, peeled and cut into ½” thick pieces

1 Yam, peeled and cut into chunks

¼ cup chopped Onion

1 teaspoon Ginger, freshly ground or powder

1 teaspoon Cinnamon, freshly ground or powder

1 teaspoon Nutmeg

1 tablespoon Carrington Farms Liquid Rosemary Coconut Oil

 

Fill T-Fal Compact Steamer tank with water up to the line indicated.

Place apples, carrots and yam in Bowl 1. Sprinkle with ginger, cinnamon and nutmeg. Add coconut oil and toss until well coated.

Put bowl on steamer tank. Cover and set for 10 minutes.

 

Pat chicken breasts with paper towel to get rid of access liquid. Spread Amazing Rub evenly over chicken breasts and gently massage in herbs.

 

When timer goes off, place chicken in Bowl 2 on top of vegetables.  Set timer for 20 minutes.

 

Optional: Mix drippings from the bottom of the steamer with one tablespoon of corn starch. Boil until thickened, stirring frequently. Pour gravy over chicken.
