Dinner & A Movie - Spinach and Artichoke Flatbread

We're making a yummy flatbread for dinner tonight.
Spinach and Artichoke Flatbread
4 each Flat bread
¾ lbs artichoke hearts, drained and chopped
2 oz fresh spinach, chopped
2 oz feta cheese, crumbled
½ tbsp chopped garlic
½ tbsp. olive oil
1 oz red onion, julienned
8 oz mozzarella cheese, shredded
¼ tsp dried basil

Toss together Chopped Artichokes, Chopped Spinach, Crumbled Feta Cheese, Garlic and Olive Oil.
Line sheet pans with parchment paper and dust with Corn Meal. Place flatbreads on pan.
Spread 4oz of Artichoke mixture onto Flat Bread. (Leaving a half inch rim)
Place .25oz Red Onion pieces (6-8) on top of Artichoke mixture.
Sprinkle with 2oz of Mozzarella cheese.
Lightly shake Basil over flat breads (1/2 tsp per pan of 6)
Bake at 375F degrees oven for 8-10 minutes till cheese is melted and golden.

Plating Instructions:
Cut flat bread in half on diagonal and serve on a plate.
Garnish with chopped parsley
