RECIPE (Borrowed from Recreating Happiness)


·         1 head cauliflower

·         1 cup chopped carrots

·         2.5 teaspoons salt

·         ¼ teaspoon pepper

·         1 tbsp smart balance spread

·         2 tbsp RF Organic Milk

·         2 cups organic cheddar cheese, shredded

·         1 cup crushed whole grain cereal flakes

·         16 oz whole grain pasta shells or other kind of whole grain pasta


1.      Preheat oven to 375º F.

2.      apply non-stick spray to a 9" baking pan or dish.

3.      Bring 2 large pots of salted water to boil over high heat.

4.      Add:

1.      1/2 lb whole grain pasta, any shape to first pot

2.      I cup cauliflower florets; 1 cup chopped butternut squash to second pot

                        Cook pasta per package directions, until pasta is firm and slightly undercooked.

                        Cook vegetables until soft then in a blender purée until smooth cooked cauliflower with:

0.      1/2 cup RF milk, 1 tbsp smart balance spread

                        Pour milk mixture into a bowl and whisk in:

0.      2 eggs, large

                        Put half the cooked macaroni into the baking pan and top with:

0.      1 cup cheddar cheese , shredded

                        Next, layer with the rest of the macaroni and pour milk mixture over the top.

                        Sprinkle over the top:

0.      1 cup cheddar cheese , shredded

                        Place in a ziploc bag:

0.      1 cup whole grain cereal flakes

                        Crush cereal in the bag with a rolling pin and add:

0.      1/4 cup wheat germ

1.      2 TBS Parmesan cheese , grated

                        Mix cereal mixture in the bag by shaking it and sprinkle over the top of the macaroni and cheese.

                        Dot the top of the cereal mixture with:

                        Bake casserole 30-35 minutes, or until golden and bubbling.
