Happy Home Cookery - Vanilla Flavored Flaming Pears

Matt & Heather are trying out a recipe shared in the Happy Home Cookery cookbook from November, 1956.
Vanilla Flavored Flaming Pears
1 C sugar
1 1/2 C water
1/16th t. salt
1/4 C fresh lemon juice
6 fresh uncooked pears
1 t. vanilla
12 lumps of sugar
lemon extract

Mix sugar, water, salt, and lemon juice in a saucepan.  Stir well and cook over low heat until sugar is dissolved.  Bring juice to a boiling point.  Wash pears, peel, and cut in halves.  Remove cores, and drop into the boiling water.  Cover.  Cook 20-25 minutes or until pears are tender when pierced with a knife.  Remove from heat and add vanilla. Arrange pears in a serving dish, place a lump of sugar soaked in lemon extract in each cavity, and ignite.
