Restaurant reopens after failing inspections

SAVOY -- After failing its health inspection an area restaurant is back open for business.

SAVOY -- More than ten restaurants in Champaign County failed health inspections. WCIA-3's Anthony Antoine shows us how one restaurant cleaned up its act.

Smoky's House BBQ opened in July. Dave Gallop and his friends are regulars.

"We traveled so far, just so we can come to Smoky's. We've been coming here since they opened the doors, and literally, we were one of the first groups of people in here."

The health district was right behind him. The restaurant failed two inspections.

"A lot of it was just small, minor maintenance details."

The biggest problem was not having meats stored at the right temperature.

"A lot of restaurants face that when they come in. You can't have that two-three weeks of training that goes into it. We have to be able to just open and rely on some of the training, and people basically learn as you go."

To learn that lesson, the health district closed the restaurant.

"That's all it took. A matter of 24 hours."

And, they got their act together.

"We've come up with flow charts, basically so we can monitor the cooking and holding temperature a lot better. We track all the holding temperature every two hours and write it on the clipboard and we also got different steam-well lids so it traps the steam in a lot better."

Customers are happy the restaurant is still open.

"I'm not going to stop eating."

SAVOY -- After failing its health inspection, an area restaurant is back open for business. Smoky's House BBQ failed two health inspections, September 9 and October 7. Most of the violations came form not having food stored at the right temperature.

For one day, the restaurant closed its doors and cleaned up its act. The owner has new ways to keep his business up-to-code. The restaurant scored a 95 on its last inspection.
