What's For Dinner? Cheese Soup

Linda Ingles is back with a comfort food cheese soup recipe.
CHEESE SOUP

1 1/2 quarts water
6 chicken boullion cubes
1 cup celery, chopped
1 cup onion, chopped

Cook the above ingredients in a large dutch oven pot for 20 minutes.

Add to the above:

2 1/2 cups diced raw potatoes
1- 10 ounce package frozen peas
2 cups chopped carrots
2 cups chopped cauliflower

Cook for 30 minutes or until vegetables are tender.

Meanwhile, combine the following ingredients and cook on low in another pan until melted together to make a smooth sauce/ or I like to melt these together in the microwave to make the sauce.

2 cans cream of chicken soup
1 can cheddar cheese soup
1 can water
1 lb. of velveeta cheese, cubed

Once the above ingredients are melted, add to the large vegetable mixture. Cook slowly for 30 minutes to combine flavors.
