3-Minute Grill: Baked Buffalo Shrimp

CHAMPAIGN,Ill - Cooking coach Adam Wisnewski from Breakfast, Life and Dinner joins the Morning Show and in this week's 3-Minute Grill, we are cooking up some baked buffalo shrimp.

A fancy twist on an old favorite, just in time for the New Year’s Eve holiday party.

Ingredients
1 pound shrimp, deveined, shells and tails removed
1 egg
½ cup milk
1 ½ cup panko bread crumbs
¼ cup parmesan cheese
Oil spray for pan
 
Sauce:
½ cup butter (1 stick)
1 cup Frank’s Hot Sauce
1 tsp garlic powder
1 tsp smoked paprika
1 tsp lemon or lime juice
 
Instructions
  • Preheat oven to 425
  • Whip egg and milk together
  • Mix bread crumbs and cheese
  • Pat shrimp dry, then dredge in egg wash, toss in bread crumb mix
  • Place shrimp on non-stick or sprayed baking sheet in a single layer, lightly spray tops of shrimp
  • Bake for 5-7 min, broil for an additional 2 minutes as needed, until breading is golden and shrimp is opaque through (peirce with the tip of a knife to test)
  • Place shrimp in bowl, top with sauce, lightly toss

Try: Substitute ½ cup shredded coconut for 1/2 cup of the bread crumbs, serve with other sauces like teriyaki,, garlic and parmesan, thai chili and lime. Put some broccoli and cauliflower in to roast about 10 minutes before adding shrimp to the oven, then toss all veggies and shrimp in the sauce together.

Serve with: creamy dipping sauce and veggies, like ranch or blue cheese dressings plus cucumber, celery, and carrots.
